Meunerie is the art of turning grain into flour — and all the know-how that goes with it.

Long practised on a millstone, in watermills and windmills, it was industrialised in the 19th century with the minoteries. Modern milling is a precision industry that produces flours suited to every use: baking, pastry, biscuit-making.
